At Char Pizza, everything starts with our slow-fermented dough. Made with Italian-style 00 flour, water, sea salt, and fresh yeast, our dough ferments for up to 72 hours to develop flavor, texture, and digestibility.
Using high-protein imported flour and traditional fermentation methods, we create a light, airy crust with balance and character. The same dough is also used to craft our focaccia and Panuzzo's Italian-style sandwiches made from pizza dough instead of traditional bread.
Beyond our dough, many of our sauces, dressings, and spreads are prepared fresh in-house daily. From our marinara and pistachio pesto to our lemon vinaigrettes and house-made Caesar dressing with anchovies, garlic, parmesan, and traditional ingredients, every recipe is crafted with freshness and flavor in mind.
We also blend local and imported ingredients throughout our menu — including Georgia honey used in our signature hot honey sauces, combined with Calabrian chili oils and Italian-inspired flavors that reflect both tradition and creativity.
We proudly work with select imported ingredients, including DOP-certified products. DOP (“Denominazione di Origine Protetta”) is an Italian certification that protects authentic regional foods made under strict traditional standards, representing quality, origin, and craftsmanship.
